  • At the wedding of early European history sugared almonds to wish happiness, good health, wealth and children were distributed.
  • There are two kinds of almonds, sweet and bitter. Bitter almonds contain a molecule called tonsillar and an enzyme called emulsina. By eating such almonds, the two substances come into contact and form hydrogen cyanide, benzaldehyde (responsible for the bitter taste) and D-glucose.
